Baked Chicken with Cherry Tomatoes | Easy Dinner Ideas

Baked chicken with cherry tomatoes makes an easy one-dish meal which is ready in under 30 minutes. The sweetness and smoky flavor of cherry tomatoes come through in the juicy, flavorful chicken breasts.

This is one of my favorite baked chicken recipe. As the chicken breasts bake on top of the tomatoes, the sauce turns into a delicious tomato pan sauce. Soak up some bread in this delicious pan sauce and relish it. This is one of the simplest, tastiest, and cost effective weeknight dinner I have ever made.

Ingredients required for THIS Baked Chicken Recipe

Chicken Breasts: Key ingredient of this dish. Always use skinless and boneless chicken breasts for this dish. You can use chicken thighs or legs, however, baking time will vary.

Cherry Tomatoes: Another important ingredients of this recipe. After baking, cherry tomatoes turn out smoky which gives a distinct flavor to the dish.

Garlic: I always prefer fresh garlic flavor in my baked chicken dish. Hence, I would recommend to add fresh garlic cloves and you can either use them as whole pod or smash them for more garlicky flavor. Alternatively, you might use garlic powder and combine it with the herbs before thoroughly rubbing the chicken breasts.

Seasoning and Herbs: I have used normal salt for seasoning. However, you can use kosher salt or pink salt. Freshly ground black pepper always adds a flavorful kick. Besides, I have used dried oregano and added some fresh rosemary sprigs. You can use any specific herb of your choice.

Olive oil: Use of olive oil is must as it adds flavor to chicken breasts. It also adds moisture and helps the seasonings remain to the breast, keeping the chicken from adhering to the bottom of the baking tray.

How to make this Baked Chicken with Cherry Tomatoes and Herbs

First, set the oven to 220 C. (430 degree F) and grease a baking tray.

Meanwhile, place the chicken breasts into a large dish. In a small bowl, combine the vinegar, olive oil, oregano, salt, and black pepper. Make sure the mixture is applied evenly to the chicken breasts.

After that, keep the marinated chicken breasts on the greased baking sheet. Around the chicken in the dish, arrange the tomatoes, garlic, and rosemary sprigs. You can use mixed dried herbs of your choice.

Place the baking pan in the oven and cook the chicken for 20 to 25 minutes at 220 degrees Celsius.

Once the chicken breasts are baked, take them out of the oven and allow to cool for 5 minutes While serving place a chicken breast and an equal quantity of tomatoes and herbs around it on each plate. Add some pan juices, then serve immediately.

What to serve with Baked Chicken with Cherry Tomatoes

Baked chicken breasts serve as great meal and I love to pair them with some green salads, stir fry dishes (String Beans Stir Fry, Garlic Broccoli Stir Fry, Mushroom Stir Fry with Bell Pepper), or some bread slices. I also serve them along with mashed potatoes, honey glazed carrots or some air fryer vegetables. You can also serve it with rice, pasta, or boiled vegetables.

Materials

  • 3 no Chicken Breasts skinless, boneless
  • 2 cups Cherry Tomatoes cut into halves
  • 10-12 nos Garlic Cloves
  • 1-2 nos Rosemary sprigs (optional)
  • ½ teaspoon Oregano
  • Salt to taste
  • 2½ tablespoon Olive Oil
  • ½ teaspoon Crushed Black Pepper
  • 1 teaspoon Vinegar

Instructions

  • Preheat oven to 220 degree C (430 degree F).
  • Take chicken breasts in a large bowl. Mix salt, crushed black pepper, herbs (oregano & rosemary), vinegar, and olive oil in a small bowl.
  • Rub seasoning all over each breast. Make sure chicken breasts are evenly coated with the mixture.
  • Grease the baking tray and place the marinated chicken breasts.
  • Arrange the tomatoes, garlic cloves, and rosemary sprigs around the chicken in the dish.
  • Place the baking tray in the oven and bake for 20-25 minutes at 220 degree C or until the chicken is cooked.
  • Place a chicken breast on each plate and surround it with an equal amount of tomatoes and herbs. Add some pan juices, then serve right away.
