I often make this tofu bhurji on busy weekdays when I need a quick, protein-rich meal. It comes together easily with simple pantry ingredients and is perfect for breakfast, lunch, or dinner.

Ingredients

Tofu: Tofu is the main ingredient of this scramble. Firm tofu works best as it holds shape while cooking.

Vegetables: Green peas bring a slight sweetness, vibrant color, and extra nutrition to the recipe. If you are using fresh green peas, blanch them before using in the dish. You can also use frozen peas and use them after thawing. Carrots add crunch, natural sweetness, and a colorful touch to the scramble.

Onion: Use finely chopped onion to prepare the base of the dish.

Spice Powders: Combination of turmeric, red chili, cumin and coriander powder enhance flavor and adds color to the dish.

Oil: A neutral cooking oil is essential for sautéing ingredients. I have used vegetable oil for this recipe.

Others: Ginger paste, green chili, coriander leaves, salt, cumin seeds, etc.

Prepare the Tofu

Remove the tofu block from its package and drain all the excess water. Place the tofu in a bowl and fully submerge it in warm salted water for about 10–15 minutes.

This step helps improve the texture and flavor of the tofu. The warm salted water gently seasons it from the inside and makes the tofu softer and more pleasant to eat. After soaking, remove the tofu from the water and lightly squeeze or pat it dry using a clean kitchen towel or paper towel.

Using a grater or your hands, crumble or grate the tofu and keep aside.

How to make Tofu Scramble Recipe

Place a pan or skillet over medium heat and add the oil. Once the oil is hot, add the cumin seeds. Allow the cumin seeds to crackle and release their aroma.

Add the chopped onions to the pan. Cook the onions while stirring occasionally until they become soft and transparent.

Next add the blanched peas and grated carrot to the pan. Stir-fry the vegetables for 2–3 minutes until they begin to soften slightly.

Now add the chopped tomatoes and green chilies. Cook the mixture for a few minutes, stirring occasionally, until the tomatoes soften completely and the raw smell disappears.

Add the ginger paste and mix well. Then add turmeric powder, cumin powder, coriander powder, and red chili powder. Stir everything together and cook the spices for about 1 minute until aromatic.

Add the grated tofu to the pan. Mix everything thoroughly so the tofu gets evenly coated with the masala and vegetables. The tofu will absorb the flavors as it cooks.

If the tofu scramble becomes dry while cooking, add a little water to keep it moist and stop it from sticking.

Taste the tofu scramble and adjust the seasoning if needed. Turn off the heat and garnish the tofu scramble with freshly chopped coriander leaves.

  • Serve hot with toasted bread or buttered whole wheat toast for a simple breakfast.
  • Pair with chapati, paratha, or roti for an Indian-style meal.
  • Enjoy with dosa or stuffed inside wraps and sandwiches.

Storage

Allow the tofu scramble to cool to room temperature before storing. Transfer the scramble to a clean airtight container. This prevents the tofu from drying out. Tofu scramble stays fresh in the refrigerator for 2-3days. You can reheat on the stovetop or in microwave.

Materials

  • 200 gms Tofu
  • ½ cup Carrot grated
  • ½ cup Green Peas blanched
  • 2 nos Onion (medium) chopped
  • 1 no Tomato (small) chopped
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Ginger Paste
  • ½ teaspoon Turmeric Powder
  • 1 teaspoon Coriander Powder
  • ⅔ teaspoon Cumin Powder
  • ½ teaspoon Red Chili Powder
  • 1 teaspoon Green Chili chopped
  • 2-3 tablespoon Vegetable Oil
  • Salt to taste
  • 2 tablespoon Chopped Coriander Leaves optional

Instructions

  • Before cooking, remove the tofu block from the package and drain the water.

  • Now add the grated tofu and mix everything well. Add salt to taste and cook for 5–7 minutes, stirring occasionally.
  • If the mixture becomes too dry, add a splash of water as needed.
  • Taste and adjust the seasoning if required. Turn off the heat and garnish with freshly chopped coriander leaves before serving.
