On busy days, I love recipes that don’t take much effort but still feel special. This zucchini sandwich with cheese is one of those little kitchen wins—fresh zucchini layered with cheese, grilled until golden, and ready in minutes. It’s comfort food with a fresh twist.

Why Should You Make Zucchini and Cheese Sandwich

Ingredients

Bread: Use fresh sandwich bread such as white bread, whole wheat bread, or multigrain bread. Slightly thick slices are ideal to hold the zucchini and melted cheese without becoming soggy.

Zucchini: Zucchini is a mild-flavored summer squash that becomes tender and slightly sweet when cooked. In a sandwich, it adds a fresh, juicy texture and pairs perfectly with melted cheese.

Cheese: Cheese brings creaminess and a rich, savory taste to the sandwich. As it melts, it binds the zucchini slices together and gives a smooth, gooey texture.

You can use a cheese slice for the best result, as it melts evenly and holds the sandwich together. If you prefer, you can also use grated cheese

Instructions

Follow these simple steps to prepare a delicious zucchini and cheese sandwich.

Wash the zucchini thoroughly under running water to remove any dirt. Pat it completely dry using a clean kitchen towel. Trim off both ends and slice it into thin, even roundels (about 2–3 mm thick).

Lay two slices of bread on a clean, flat surface or chopping board. Make sure the slices are fresh and even in size for uniform grilling.

Arrange the zucchini slices in a single layer over one slice of bread. Slightly overlap them so every bite has zucchini, but avoid overcrowding, which can make the sandwich bulky.

Lightly sprinkle salt over the zucchini slices. Add freshly crushed black pepper for a mild heat and enhanced flavor. Do not over-salt, as the cheese will also add saltiness.

Place a cheese slice evenly over the seasoned zucchini. Ensure it covers most of the surface so it melts uniformly and binds the filling together while grilling.

Gently place the second bread slice on top to form a sandwich. Press it lightly with your palm so the filling settles and stays in place.

Spread softened butter evenly on the top slice of bread. Flip the sandwich carefully and spread butter on the other side as well.

Place a grill pan on medium heat and allow it to preheat for 1–2 minutes.

Place the sandwich onto the heated pan. Cook for 2–3 minutes on one side until golden brown and crisp, pressing gently with a spatula for even grilling.

Flip carefully and cook the other side for another 2–3 minutes until golden and the cheese has melted completely. Grilled Zucchini Sandwich with Cheese (or zucchini cheese toast) is ready.

Variations

Zucchini sandwich fillings can be versatile and fun. Grilled zucchini goes great with hummus or ricotta, and you can throw in roasted peppers, basil, and some feta for more flavor.

  • Thin slices cook faster and prevent the sandwich from becoming soggy. Aim for about 2–3 mm thickness.
  • Grill the sandwich on medium heat to ensure the cheese melts and the bread turns golden without burning.

How to Make Zucchini Cheese Sandwich in an Air Fryer

You can also make these sandwiches in an air fryer. Simply follow the above given steps to prepare the bread, layer the zucchini, season, add cheese, and close the sandwich. Then transfer the sandwich to a preheated air fryer at 180°C (350°F) for 2–3 minutes.
Cook for 5–7 minutes, flipping halfway through. Once the bread turns golden brown and the cheese is melted, remove the sandwich. Let it rest for 1 minute, then slice and serve hot.

Materials

  • 6 slices Bread
  • 1 no Zucchini small, cut in to round
  • 3-4 nos Cheese Slices
  • 2 tablespoon Butter
  • Salt to taste
  • ½ teaspoon Black Pepper

Instructions

  • Wash the zucchini thoroughly and pat it dry with a clean kitchen towel.
