Indian Chicken Fried Rice

Indian Chicken Fried Rice is prepared by stir frying the cooked rice with chicken chunks, scrambled eggs, vegetables and sauces on a high flame. This chicken fried rice is very simple and can be prepared under 30 minutes.

This popular fusion fried rice is made using the Chinese stir fry technique. Therefore, it is also known as Indo Chinese Chicken Fried Rice.

This Indian Chicken Fried Rice Recipe is favorite at home, and I often prepare this quick rice meal to save my time. Here, I am showing you the easiest way to prepare the chicken fried rice for your weeknight meal.

Ingredients for Indian Style Chicken Fried Rice

Following ingredients are required to make the Best Chicken Fried Rice.

Cooked Rice - Use cooked and refrigerated rice to get restaurant style taste in the fried rice. However, you can prepare the rice from the scratch, in that case it will take 15-20 minutes extra time.

Chicken Chunks - Usually, I use boneless chicken chunks for this recipe. You can also use the whole chicken breast and later shred it to use in fried rice.

Vegetables - Predominantly, carrot, beans, cabbage and onions are used in fried rice recipe. Finely chop the veggies to add in the fried rice. However, some people also use bell peppers, baby corns, mushrooms and green peas in the fried rice. Also, don't forget to add finely chopped spring onion to get the restaurant style taste in your homemade chicken fried rice.

Eggs - I use scrambled eggs in my fried rice and it definitely enhances the taste of the dish.

Sesame Oil - Normally, sesame oil is used in Indo-Chinese dishes. However, you can also replace it with any vegetable oil.

In addition to the listed ingredients, I also added soy sauce, salt, and vinegar.

Certain restaurants use Ajinomoto i.e., monosodium glutamate (MSG) in Indo-Chinese preparations to add flavors to the dishes. As per various articles use of MSG is controversial, hence I don't use MSG in any of the Indo-Chinese dishes.

How to prepare Quick Chicken Fried Rice Step-by-Step?

You can also call this recipe Easy Chicken Fried Rice because it can be prepared by anyone from a bachelor to a novice person. I promise that it is definitely a better meal than your take outs.

Personally, I would recommend using cooked and refrigerated rice for this fried rice recipe. However, if you do not have any cooked rice then you can do it from scratch by washing and soaking the rice for 10 minutes.

Later drain off the water and cook the rice with 3-4 cups water and once the rice is 90% cooked, drain the water and spread it in a plate to cool. Once the rice comes to room temperature, you can use it for making the dish. However, use cooked and refrigerated to get the best result.

Now take the boneless chicken cubes or chunks in a bowl and marinate with salt and pepper for 10 minutes. Later heat oil in a wok or pan and stir-fry the chicken pieces. Once done, add soy sauce to the chicken pieces and toss quickly and keep aside.

Again heat oil in the pan, now add the whisked eggs and scramble them. Once done, take the scrambled eggs out of the pan and keep aside.

Next heat remaining oil in wok and finely chopped onions. Once they turn translucent, add chopped beans, cabbage and carrot and sauté for few minutes. Add salt to taste and mix well.

Now add the cooked rice and mix well with veggies. Finally, add fried chicken cubes and scrambled eggs into rice and give a good mix. Also, mix vinegar and soy sauce in a bowl and add into the rice. Next add chopped spring onions, combine well and Chicken Fried Rice is ready to be served.

Storage and Re-heating

Allow the fried rice to cool before storing it in an airtight container in the refrigerator for 2-3 days.

You can reheat the fried rice either in microwave or stovetop. Take the fried rice in microwave safe bowl and reheat it. If you want to reheat on stove top, then heat little bit of oil in a nonstick pan and add the fried rice, and quickly toss on the heat.

Serving Suggestions

You can serve this Fried Rice with any appetizers such as Drums of Heaven. You can also pair it with certain side dishes including Chilli Chicken, Garlic Chicken, Sweet and Sour Chicken, etc.

This Restaurant style chicken fried rice pairs wonderfully with vegetarian sides like mushroom and bell pepper stir fry, broccoli stir fry, and so on. I can have this chicken fried rice without any sides as well and my daughter prefers to have it with tomato ketchup.

Variations

You can make different variation of this dish. Some of the interesting variations include Schezwan chicken fried rice (spicy and fiery), South Indian chicken fried rice (with addition of curry leaves and mustard), Burnt garlic chicken fried rice (garlic flavor), etc.

FAQ

What type of rice is the best for fried rice?

Jasmine rice is typically used for Chinese style fried rice. However, chicken fried rice Indian recipe can be prepared using long grain basmati rice. Normally, I use kolam rice which is medium sized rice grain mostly available in southern part of India.

Which oil should I use for fried rice?

I use sesame oil for Indo-Chinese preparations including fried rice and noodles. However, if you do not prefer the taste of sesame oil, then you can use any vegetable oil.

Materials

  • 3 cups Cooked Rice
  • 250 gms Boneless Chicken Chunks
  • 2 Eggs
  • 2 tablespoon Carrot finely chopped
  • 2 tablespoon Beans finely chopped
  • ¼ cup Cabbage finely sliced
  • 1 no Onion, big finely chopped
  • 2 tablespoon Spring Onion finely chopped
  • ¼ cup Sesame Oil
  • 3 tablespoon Soy Sauce
  • 1 tablespoon Vinegar
  • Salt to taste

Instructions

  • Take the boneless chicken cubes or chunks in a bowl and marinate with salt and pepper for 10 minutes.
  • Later heat oil in a wok or pan and stir-fry the chicken pieces.
  • Once done, add soy sauce to the chicken pieces and toss quickly and keep aside.
  • Again heat oil in the pan, now add the whisked eggs and scramble them with little bit of salt. Once done, take the scrambled eggs out of the pan and keep aside.
  • Next heat remaining oil in wok and finely chopped onions.
  • Once they turn translucent, add chopped beans, cabbage and carrot and sauté for few minutes. Add salt to taste and mix well.
  • Now add the cooked rice and mix well with veggies.
  • Finally, add fried chicken cubes and scrambled eggs into rice and give a good mix.
  • In a separate bowl, combine the vinegar and soy sauce and stir into the rice.
  • Now add chopped spring onions and lightly mix them. Chicken Fried Rice is ready to serve.
