Ingredients
Corn: The key ingredient of this Indian street corn masala is sweet corn kernels. You can use corn kernels from corn on the cob by removing them after boiling the corn. You can also use peeled corn kernels from the market, or canned corn kernels or frozen corn for a quicker option.

Butter: It adds richness and a smooth texture to the corn. It balances the spices with a creamy flavor. I have used salted butter.
Spices: Primarily, I have used chaat masala powder, black salt, red chili for this Indian style spicy corn recipe.

Lemon Juice: This adds freshness and slight tang to the dish.
Instructions
Follow the steps below to prepare tasty Masala Corn Chaat. It is a simple and flavorful snack that can be made at home in just a few minutes using a few ingredients.
If you are using fresh corn kernels, add them directly to a pot of boiling water and cook for about 3–4 minutes. This is enough to make the corn soft while still keeping a slight bite. Once done, drain the water completely so the chaat doesn’t become watery.

If you are using store-bought frozen corn, thaw it first and then boil it in hot water for a short time (about 1–2 minutes), as it cooks faster than fresh corn kernels.
Transfer the hot, boiled corn into a mixing bowl. While the corn is still warm, add a spoon of butter. The heat from the corn will melt the butter, allowing it to coat the kernels nicely and give the dish a rich, creamy taste.

Sprinkle chaat masala, red chili powder, and black salt over the corn. Mix everything well so the spices coat the buttery kernels evenly. This is the step that gives the corn its chatpata (spicy and tangy), street-style flavor.

Squeeze some fresh lemon juice over the spiced corn. The lemon adds a nice tangy taste and balances the richness of the butter, making the chaat fresh and flavorful.
Garnish with freshly chopped coriander leaves for extra flavor and color. Serve the masala corn warm, as it tastes best when it is fresh.

If you are using canned corn, rinse it well and drain the water completely. Place the corn in a microwave-safe bowl and heat it in the microwave for about 1 minute. After that, follow the same steps as the recipe.
Variations
Try these delicious twists on masala corn to keep your snack exciting and flavorful.
- Cheese Masala Corn: Mix grated cheddar or processed cheese into the hot corn. It melts perfectly, making it creamy and delicious.
- Peri-Peri Corn: Spicy, smoky sweet corn tossed in zesty peri-peri seasoning and butter.
- Vegetable Masala Sweet Corn: Sauté boiled corn with chopped vegetables (carrot, capsicum, onion, etc.), spices, butter, and a squeeze of lemon for a tasty Vegetable Masala Sweet Corn.
Top tips
- Fresh corn gives the best taste, but if using frozen, thaw completely before boiling to avoid sogginess.
- Boil for just 3–4 minutes so the kernels stay juicy and slightly firm. Overcooking makes them mushy.
- Add butter right after draining the corn so it melts quickly and coats every kernel evenly, giving it a rich flavor.
- Add chili powder and chaat masala according to your taste, as too much can hide the natural sweetness of the corn.
