Although nachos are originally a Mexican dish, chicken fajita nachos gradually found their way into Indian food culture around 2018 or so, especially through cafés, pubs, and casual dining restaurants in metro cities.

Ingredients

Chicken: It is a key ingredient of the dish. I have used boneless tender bite-sized chicken pieces.

Bell Peppers: I have used red and yellow bell peppers for this dish. You can use any color bell pepper of your choice.

Onion: Onions bring a mild sweetness and depth of flavor, especially when lightly sautéed until soft but still slightly crisp.

Cheese: I have used mix of cheddar and mozzarella cheese for this chicken fajita nachos recipe for gooey richness that binds everything together.

Spices: Fajita seasoning is the key spice for this dish. If you don’t have fajita seasoning, you can easily substitute it with Mexican seasoning. Also, refer to our FAQ section for more details about fajita seasoning.
Oil: In this recipe, I have used vegetable oil for cooking chicken and vegetables.

Others: Salt, lime juice, etc.

Instructions

Let’s get started with these simple steps to create delicious, loaded chicken fajita nachos that are perfect for any occasion.

Marinate the Chicken

Start by adding the chicken pieces to a mixing bowl. Sprinkle in a little salt and drizzle fresh lime juice over the chicken. Mix well so the chicken is lightly seasoned and coated with the lime juice.

Fajita seasoning in a bowl and marinate the chicken with fajita seasoning and frying the marinated chicken pieces

Next, add the fajita seasoning mix. Toss the chicken until each piece is evenly coated with the spices. Cover the bowl and set the chicken aside to marinate for 10–15 minutes. Even this short marination time helps the chicken absorb the flavors.

Cook Chicken & Vegetables

Heat 1 tablespoon of oil in a pan over medium heat. Once the oil is hot, add the marinated chicken pieces. Cook the chicken for 6–8 minutes, turning occasionally, until it is cooked through and lightly golden on all sides. Once done, remove the chicken from the pan and set it aside.

sauté the bell peppers

In the same pan, add another tablespoon of oil. Add the chopped onions and bell peppers and sauté for a few minutes until they soften slightly but still retain some crunch.

Season with a little salt and a pinch of fajita seasoning. Toss everything well so the vegetables are evenly coated and flavorful. Remove from heat and keep aside.

Layering & Baking

Take a baking tray and spread half of the tortilla chips evenly to form the base layer. Top the chips with half of the cooked chicken, followed by half of the sautéed onions and bell peppers. Sprinkle half of the cheese evenly over the top.

Add another layer using the remaining tortilla chips. Top with the remaining chicken, vegetables, and cheese. This double-layer method ensures every bite is loaded with flavor and cheesy goodness.

layering of tortilla chips along with chicken, peppers and cheese and ready for baking

Preheat the oven to 180°C (350°F) for 5 minutes. Place the baking tray in the oven and bake for 10–15 minutes, or until the cheese has completely melted and turned soft and gooey. Keep an eye on it so the chips don’t burn.

Serving Suggestions

Serve hot straight from the oven while the cheese is perfectly melted and gooey. Pair with sour cream, salsa (cucumber avocado salsa, bell pepper salsa), or guacamole on the side for dipping.

Serve as a party appetizer, game-night snack, or casual get-together dish. Enjoy with lemonade, mocktails, or chilled soft drinks (masala coke, Indian lemonade) for a refreshing contrast.

Variations

Here are some popular and easy variations of Chicken Fajita Nachos you can try:

  • Spicy Chicken Fajita Nachos: You can make spicy version by adding extra chili powder, cayenne pepper, or sliced jalapeños to the chicken for a fiery kick.
  • BBQ Chicken Fajita Nachos: Toss the cooked chicken in a little BBQ sauce before layering for a smoky-sweet twist.
  • Tandoori Chicken Fajita Nachos: Add a pinch of tandoori masala while cooking the chicken and vegetables for Indian taste.

Storage

After layering and assembling, I would not suggest storing nachos as the chips get soggy.

If you haven’t layered the nachos yet, you can store the cooked chicken and vegetables separately in airtight containers. Refrigerate and use them within 2 days when ready to layer and prepare the chicken fajita nachos recipe.

Top tips

  • Use sturdy tortilla chips to prevent them from getting soggy under the toppings.
  • Spreading toppings evenly ensures every bite is flavorful and cheesy.
  • Bake just until the cheese melts; overbaking can make the chips too hard.

FAQ

Fajita Seasoning

You can prepare your own fajita seasoning by adding chili powder, paprika powder, cumin powder, garlic powder and dried oregano. Combine well and freshly prepared fajita seasoning is ready to use.
