Ingredients
Chicken: It is a key ingredient of the dish. I have used boneless tender bite-sized chicken pieces.
Bell Peppers: I have used red and yellow bell peppers for this dish. You can use any color bell pepper of your choice.
Onion: Onions bring a mild sweetness and depth of flavor, especially when lightly sautéed until soft but still slightly crisp.
Cheese: I have used mix of cheddar and mozzarella cheese for this chicken fajita nachos recipe for gooey richness that binds everything together.
Spices: Fajita seasoning is the key spice for this dish. If you don’t have fajita seasoning, you can easily substitute it with Mexican seasoning. Also, refer to our FAQ section for more details about fajita seasoning.
Oil: In this recipe, I have used vegetable oil for cooking chicken and vegetables.
Others: Salt, lime juice, etc.
Instructions
Let’s get started with these simple steps to create delicious, loaded chicken fajita nachos that are perfect for any occasion.
Marinate the Chicken
Start by adding the chicken pieces to a mixing bowl. Sprinkle in a little salt and drizzle fresh lime juice over the chicken. Mix well so the chicken is lightly seasoned and coated with the lime juice.

Next, add the fajita seasoning mix. Toss the chicken until each piece is evenly coated with the spices. Cover the bowl and set the chicken aside to marinate for 10–15 minutes. Even this short marination time helps the chicken absorb the flavors.
Cook Chicken & Vegetables
Heat 1 tablespoon of oil in a pan over medium heat. Once the oil is hot, add the marinated chicken pieces. Cook the chicken for 6–8 minutes, turning occasionally, until it is cooked through and lightly golden on all sides. Once done, remove the chicken from the pan and set it aside.

In the same pan, add another tablespoon of oil. Add the chopped onions and bell peppers and sauté for a few minutes until they soften slightly but still retain some crunch.
Season with a little salt and a pinch of fajita seasoning. Toss everything well so the vegetables are evenly coated and flavorful. Remove from heat and keep aside.

Layering & Baking
Take a baking tray and spread half of the tortilla chips evenly to form the base layer. Top the chips with half of the cooked chicken, followed by half of the sautéed onions and bell peppers. Sprinkle half of the cheese evenly over the top.
Add another layer using the remaining tortilla chips. Top with the remaining chicken, vegetables, and cheese. This double-layer method ensures every bite is loaded with flavor and cheesy goodness.

Preheat the oven to 180°C (350°F) for 5 minutes. Place the baking tray in the oven and bake for 10–15 minutes, or until the cheese has completely melted and turned soft and gooey. Keep an eye on it so the chips don’t burn.
Serving Suggestions
Serve hot straight from the oven while the cheese is perfectly melted and gooey. Pair with sour cream, salsa (cucumber avocado salsa, bell pepper salsa), or guacamole on the side for dipping.
