Mushroom Stir Fry with Bell Pepper

Mushroom stir-fry with bell pepper or mushroom pepper fry is a fantastic weeknight meal because it's quick and easy and done in under 30 minutes. This vegetarian budget-friendly stir-fry is also a hit among meat-lovers because mushrooms have a meaty flavor. You can serve this stir fry over rice or noodles or as sides.

Mushroom is cooked with red bell pepper in an onion and garlic base and flavored with soy sauce, freshly crushed black peppercorn, and sesame seeds.

Why Should You Make Mushroom Pepper Fry

Ingredients

Mushroom: Mushroom is the star ingredient of this dish. There are varieties of mushroom and it is important to know which ones you can use in your stir fry. White button mushrooms are commonly used for this stir fry. However, you can use shiitake mushrooms, enoki mushrooms, Bella mushrooms, and oyster mushrooms. I have used white button mushroom for this recipe.

You can also use more than one variety of mushroom which will give different taste and texture to the recipe.

Red Bell Pepper: You can prepare a simple mushroom stir fry or enhance the dish by adding red bell pepper into it. Red bell peppers are sweeter, less bitter, and have a tinge of citrus flavor , hence I prefer to use red bell pepper in this stir fry. The yellow and orange ones are similar to the red ones, although they are less sweet and citrusy. You can use them as well.

Onion & Garlic: Onion and garlic are used as flavor enhancer in this recipe. You can also add finely chopped ginger.

Other Ingredients: Apart from the above mentioned ingredients, I have used vegetable oil, salt to taste, freshly ground black peppercorn, sesame seeds, soy sauce and freshly chopped cilantro or coriander leaves (optional). If you prefer sweet version of stir fry then you can add a dash of honey or replace soy sauce with sweet oyster sauce.

How to make Mushroom Stir Fry with Bell Pepper?

Here is the step-by-step guide to prepare this mushroom capsicum dish. Mushroom Pepper Fry is a quick dish which can be done under 30 minutes. You can cook the dish in even less time if you cut the vegetables ahead of time.

Immerse the mushrooms in a bowl of water to clean them. Rinse them with fresh water after removing the black dirt. After that, use a kitchen towel to wipe it away. Cut the mushroom into 3-5 thin slices with the head pointing down, depending on its size.

In a small bowl, combine the soy sauce and vinegar and put aside. Heat oil in a wok over high heat. Add chopped garlic and sliced onions into it and sauté for few minutes.

After that, add the sliced red bell peppers and continue to stir for 3-4 minutes. Then add the sliced mushrooms and continue to stir for another 4-5 minutes. Combine the vegetables after seasoning them with salts. Toss the vegetables with the sauce mixture as soon as possible. Finally, season with freshly ground black pepper and sesame seeds before turning off the heat.

Storage

I would recommend to have this Asian stir fry fresh right away after cooking. However, if not, after cooling you can keep it in a clean air tight container and store in the refrigerator for up to 4 days.

FAQ

Can I use other vegetables in Pepper Mushroom Stir Fry?

Absolutely. You can add your favorite veggies to this stir fry. You can add vegetables like brussels sprouts, carrots, onions, cabbage, asparagus, broccoli, snow peas, or zucchini. If you're adding other veggies, keep in mind that the amount of mushrooms and bell peppers should be reduced, so all the recipe proportions stay the same.
Apart from vegetables, you can also add tofu in this stir fry recipe.

Materials

  • 250 gms Mushroom
  • 1 no Red Bell Pepper, medium finely sliced
  • 1 no Onion, medium sliced
  • 1 teaspoon Garlic finely chopped
  • Salt to taste
  • 3 tablespoons Vegetable Oil
  • 2 teaspoons Soy Sauce
  • ½ teaspoon Crushed black peppercorn
  • 1 teaspoon Vinegar
  • 1 teaspoon Sesame Seeds

Instructions

  • Wash the mushroom by immersing them in a bowl of water. Remove the black dirt and clean them with fresh water. Later wipe it off with a kitchen towel.
  • With the head part facing down, cut each mushroom into 3-5 thin pieces depending on the size of the mushroom.
  • Whisk soy sauce and vinegar in a small bowl and set aside.
  • Heat oil in a wok over high heat.
  • Add chopped garlic and sliced onions into it and sauté for few minutes.
  • Next add sliced red bell peppers and stir constantly for 3-4 minutes.
  • After that add sliced mushrooms and keep on stirring for another 4-5 minutes.
  • Season the vegetables with salts and combine them.
  • Pour the sauce mixture over the vegetables and quickly toss them.
  • Finally, add freshly ground black pepper and sesame seeds on top and switch off the gas.
