How to Prepare Spicy Chicken Rice Bowls

Follow this step-by-step guide to prepare a Quick Chicken Rice Bowl with broccoli and spicy chicken.

Marinate the Chicken

Place chicken cubes in a mixing bowl. Add cayenne powder, garlic powder, salt, and corn flour. Mix well until chicken is evenly coated. Set aside for 10 minutes.

Prepare the Broccoli

Steam broccoli florets for 2–3 minutes until slightly tender but still crisp. Let them cool, then sauté in a pan with a pinch of salt. Keep aside.

Heat oil in a pan. Add the marinated chicken cubes. Sear until they turn golden brown on both sides. Remove from the pan and keep aside

Make the Sauce

In a small bowl, mix soy sauce, ketchup, chili powder and sugar. In the pan, add a little oil and sauté chopped garlic until fragrant.

making the base sauce

Pour in the prepared sauce mixture on low heat. Stir well.

Make a slurry by mixing 1 tbsp corn flour with 1 cup water. Add slurry to the pan, stir continuously, and let it boil for 2 minutes.

Season with salt if needed.

Combine Chicken and Vegetables

Add the fried chicken cubes back into the pan. Toss rapidly so the chicken is coated with the glossy sauce. Stir in chopped capsicum for crunch and color. Turn off heat and sprinkle sesame seeds.

Serving Suggestions

It is best enjoyed with fresh toppings and flavorful sides including fresh salads. Serving a salad alongside a chicken rice bowl is a great idea.

A fresh salad adds crunch, extra vegetables, and a light contrast to the warm, hearty bowl. You could go for: bell pepper cucumber salad, Indian egg salad, etc.

Substitutions

A Spicy Chicken Rice Bowl is super easy to customize. You can swap the chicken for tofu, shrimp, beef, or even cauliflower bites, and switch up the base with brown rice, quinoa, noodles, or cauliflower rice.

You can add in veggies like broccoli, zucchini, spinach, or snap peas, and adjust the spice level with chili crisp, jalapeños, or milder sauces like honey-soy or garlic butter.

Finish it off with your favorite sauce—spicy mayo or a soy-sesame glaze, —and top it with things like avocado, scallions, or cilantro to match your taste or dietary needs.

Variations

If you enjoy experimenting, you can try out some delicious twists on this spicy chicken rice bowl.

Swap tomato ketchup with any spicy sauce like teriyaki or schezwan or any other spicy sauce and get a variation in the spicy chicken rice bowl.

You can use vegetable of your choice and instead of broccoli, add carrot, mushroom, corn or any other vegetable of your choice.

I have used long-grained basmati rice for the base of this dish. You can use fried rice, brown rice or even quinoa as base.

Top tips

  • Cook chicken on medium-high heat to get a golden crust without drying it out.
  • Fry chicken in batches if needed; overcrowding lowers heat and makes it soggy.
  • Cornstarch slurry must be mixed right before adding or it settles and turns lumpy.
  • When adding soy sauce and ketchup, use low heat to avoid burning.

FAQ

Can I use leftover rice for this recipe?

Of course, yes! Left-over rice or pre-cooked rice is perfect for this recipe. It saves time too.

Can I air-fry the chicken instead of pan-searing?

Definitely, air-frying or baking is a healthier choice than pan-searing.
