Ingredients
Chicken: Use boneless tender chicken pieces that absorbs marinades well and cooks quickly.
Vegetables: Broccoli florets and capsicum add freshness, color, crunch to the dish.
Spices: Cayenne pepper powder, garlic powder, etc.

Rice: For this rice bowl, I used pre-cooked long-grain basmati rice, but you can choose any variety you prefer.
Oil: I have used vegetable oil, you can use olive oil.
Others: Sesame seeds, salt, sugar, corn starch, etc.
How to Prepare Spicy Chicken Rice Bowls
Follow this step-by-step guide to prepare a Quick Chicken Rice Bowl with broccoli and spicy chicken.
Marinate the Chicken
Place chicken cubes in a mixing bowl. Add cayenne powder, garlic powder, salt, and corn flour. Mix well until chicken is evenly coated. Set aside for 10 minutes.

Prepare the Broccoli
Steam broccoli florets for 2–3 minutes until slightly tender but still crisp. Let them cool, then sauté in a pan with a pinch of salt. Keep aside.

Cook the Chicken
Heat oil in a pan. Add the marinated chicken cubes. Sear until they turn golden brown on both sides. Remove from the pan and keep aside

Make the Sauce
In a small bowl, mix soy sauce, ketchup, chili powder and sugar. In the pan, add a little oil and sauté chopped garlic until fragrant.

Pour in the prepared sauce mixture on low heat. Stir well.
Make a slurry by mixing 1 tbsp corn flour with 1 cup water. Add slurry to the pan, stir continuously, and let it boil for 2 minutes.
Season with salt if needed.
Combine Chicken and Vegetables
Add the fried chicken cubes back into the pan. Toss rapidly so the chicken is coated with the glossy sauce. Stir in chopped capsicum for crunch and color. Turn off heat and sprinkle sesame seeds.

Assemble the Rice Bowl
Blend the mayonnaise and ketchup in a small bowl until they form a creamy, uniform sauce for drizzling on top.

Place a layer of cooked rice on the serving plate. Add sautéed broccoli on one side. Add spicy saucy chicken cubes on top. Drizzle with the mayo-sauce.

- Meanwhile, steam broccoli for few minutes and keep aside.
- Once cooled, sauté the broccoli with a pinch of salt and set aside.
- In a pan, heat oil and sear the marinated chicken cubes, browning them on both sides. Once done, take them out of the pan and keep aside.
- Take soy sauce, ketchup, red chili powder and sugar in a bowl, mix well and keep it ready.
- Add oil to the pan, followed by the chopped garlic.
- Sauté for few minutes and now slowly add the sauce mixture to the pan under low heat. Mix well.
- Combine cornstarch and one cup of water to make a slurry and add it immediately to the pan.
- Add salt to taste and allow to boil for couple of minutes.
- Next add the golden chicken pieces and toss them rapidly in the sauce.
- Stir in chopped capsicum and combine well.
- Turn off heat and sprinkle sesame seeds on top.
- Whisk together mayonnaise and ketchup to create the sauce.
- On a serving plate, layer rice, then add sautéed broccoli and spicy chicken, finishing with a drizzle of mayo-sauce.
