Zucchini: Fresh zucchini adds a mild, slightly sweet flavor and a pleasant crunch, making it a healthy and refreshing addition. You can either use yellow or green zucchini for this dish.
Rice: Preferably day-old rice for the best fried rice texture. It’s fluffy and holds up well in stir-fries. Normally, I use white rice, you can also use brown rice.
Oil: I prefer to use sesame oil for Indo-Chinese cooking however, you can use any vegetable oil.
Onion-Garlic: Finely chopped onion adds depth and a savory aroma, enhancing the overall flavor of the dish. Minced garlic infuses the dish with a robust, aromatic flavor that ties all the ingredients together.
Others: Egg, Salt, Soy sauce, Vinegar, etc.

Learn to prepare zucchini fried rice with egg by following the instructions given below.
If you have leftover cooked rice, you can quickly stir fry rice with zucchini.
Alternatively, you can cook rice from scratch, drain water, allow to cool the rice and later use the rice for the recipe. These steps will take another 30-45 minutes of time.
I have added scrambled egg in this fried rice recipe. If you are making it completely vegetarian this is going to be a one pot meal.
To begin the cooking process, whisk the eggs in a mixing bowl with a pinch of salt until well combined. Set the mixture aside for now.

Heat oil (1½ teaspoon) and add eggs to the pan. Make scrambled eggs and set aside.
In the pan, heat the remaining oil and add the chopped garlic.
Sauté for a few minutes, then stir in the chopped onion and simmer for another few minutes.

Next, add the diced zucchini and cook for 3-4 minutes. Avoid overcooking the zucchini. It should remain crunchy and should not be mushy in texture.
Finally, add cooked rice and salt to taste. Toss well.
Stir in the fried scrambled eggs. Mix thoroughly.

Combine vinegar and soy sauce, then add to the rice. Toss well.
Turn off the heat, and the zucchini fried rice is ready to serve.

Storage
Let the zucchini fried rice cool down to room temperature before storing it in the fridge. tore the fried rice in an airtight container to keep it fresh and prevent it from absorbing other odors in the fridge. It will stay good for up to 3–4 days in the refrigerator.
Reheat the fried rice in the microwave for 1-2 minutes, stirring halfway through.
Top tips
- Fresh rice can be too moist and sticky for fried rice. If possible, use leftover rice that’s been chilled overnight. The grains are firmer and less likely to clump together, giving you the perfect texture.
- Dice the zucchini into uniform sizes and this will ensure that the zucchini cooks evenly.
- Don't overcook the zucchini: You want the zucchini to be tender-crisp, not mushy.
- Fried rice cooks best over high heat. This allows the rice to get slightly crispy and caramelized, adding more flavor. Just make sure to keep stirring to avoid burning.
