Ingredients
Fruits: Primary ingredient of this salad is varieties of fruits. I have used fruits such as strawberry, kiwi, black grapes, pomegranate, and apple for this salad. You can also add other berries, pineapples, etc. to this salad.
Dressing: As it is a vegan salad, the dressing also very simple. It is flavored with lemon juice, olive oil, black salt, and a dash of chaat masala powder.
Instructions
Before you start making the salad, thoroughly rinse the fruits.
Strawberry stems should be removed. Cut the smaller strawberries in half, and the larger strawberries in four.
Peel the kiwi and cut it into cubes, then cut the apple into cubes.
It is also important that you remove the pomegranate pearls ahead, so that it becomes handy and quick to use them in salad.
Meanwhile, combine the lemon juice and olive oil in a small mixing bowl.
Place all of the cut fruits in a salad bowl and drizzle with the lemon-olive oil dressing.
Add black salt to taste. Toss well and serve the salad immediately.
I also prefer to add little bit of chaat masala powder in this salad. This step is completely optional. However, if you try it once, I am sure you will definitely love it.
Variations
You can add pineapple chunks, green grapes, pears, blueberries, raspberries, mulberries, etc. in this vegan fruit salad recipe.
Interestingly, you can also add freshly crushed black pepper which gives a nice spicy flavor to the salad.
If you have any mint leaves on hand, throw a couple in the salad to give it some extra freshness.
You may also experiment and use orange juice in place of the lemon juice in the dressing.
Make Ahead & Storage
You can cut and chop the fruits the day before and store them separately in containers in the refrigerator. Before serving prepare the citrus-olive oil dressing and drizzle on the salad and season it with black salt.
I would recommend to make this salad fresh and eat on the same day. However, the leftover salad can be stored in refrigerator for a day or two.
Fruits release moisture and become softer once the salad dressing and seasoning are added. Hence, even if you put the salad in the refrigerator, it will still be edible, but the flavor and texture won't be the same as they would be if it were fresh.
Top tip
- The fruits should always be pat dried after rinsing. If not, the salad will get mushy.
- Always serve the fruit salad chilled so that all the fruits in the salad remain crisp and cool.
- To avoid the salad becoming mushy, don't cut the fruits into tiny pieces.
- Removal of the pomegranate arils should be done carefully as it may leave a stain especially on the clothes.
- When you are preparing vegan salad with fruit, remember to use fresh fruits. Avoid using canned fruits in this easy vegan fruit salad.
