How to make Watermelon Mint Virgin Mojito
At first, peel the watermelon and remove the seeds. After that, cut the watermelon into small cubes. Normally, I prefer to chill the watermelon cubes for an hour before preparing the drink. However, this step is optional. If you are running out of time you can go ahead and prepare the mocktail without cooling the watermelon.
In a pitcher, take few mint leaves and muddle them using a wooden muddler. After that add watermelon chunks and sugar in the pitcher and muddle once more. Take superfine sugar or castor sugar which dissolves easily. You can also dissolve the sugar by adding little water separately and later use the syrup directly in the pitcher along with watermelon cubes.
Next add lime juice in the pitcher and combine well. Now take two serving glass, add lime roundels and ice cubes in each glass. Pour watermelon mint muddled mixture equally in each glass. Finally, fill the glass with soda water. Stir everything together thoroughly. Garnish each glass with mint leaves and some watermelon cubes. Now it is ready to serve.
