Take a large cauliflower and chop it into large florets.
Cook the cauliflower florets in 3 to 4 cups of boiling water for 2 to 3 minutes. Rinse the florets and completely drain the water.
Later cauliflower florets should be thoroughly dried before slicing into bite-sized pieces.
Mix turmeric powder, red chili powder, black pepper powder, coriander powder, garam masala powder, crushed curry leaves, ginger-garlic paste, and a little oil in a mixing bowl.
Now, add 1/4 cup of water to the spice mixture and blend until smooth.
Next, rub the spice mixture over the cauliflower florets and let aside for 15-20 minutes to marinate.
Then, in a mixing bowl, combine all-purpose flour, corn flour, and rice flour. Mix in the remaining spice mixture and make a smooth batter.
Mix in a pinch of salt into the batter.
Meanwhile, prepare the air fryer to 180° C (350° F). Spray oil into the air fryer basket.
Gobi 65 should be air fried for 12-15 minutes, or until crispy and golden brown in color. In between, shake them. If necessary, apply some oil.
Remove the basket and stir in a few curry leaves and slit green chilies. Air fry for approximately 2-3 minutes.
Sprinkle chaat masala on top and serve the hot air fried gobi 65 in a serving plate.
