Probably, the viral salad recipe used the sweet mini peppers whereas I have used bell peppers. You can try either sweet mini peppers or bell peppers and experience the flavor and I believe you will love both.
Interestingly, this cucumber bell pepper salad is vegan, nut free and dairy free.
Ingredients for Healthy Bell Pepper Cucumber Salad
Bell Pepper: Use varieties of color bell peppers for this simple bell pepper cucumber salad. I have used green, yellow and red bell peppers. You can also use orange bell peppers if it is available in your area.
Cucumber: I have used regular cucumber available in Indian market. You can also use English cucumber for this recipe.
Onion: I enjoy the taste of onion in salad; therefore, I added sliced onion in a lower quantity.
Dressing: Chili flakes, toasted white sesame seeds, garlic flakes, salt, olive oil, lemon juice, etc.
Instructions
Follow the step-by-step instructions, to prepare this bell pepper and cucumber salad. This a very simple salad recipe however, you can categorize it into two steps.

- Cutting of vegetables and mixing the salad dressing
Let's start making the salad dressing by taking a small glass jar or bowl. Add all the ingredients (mentioned under dressing), close the lid of the jar and shake it well to mix them. Keep aside.
Now slice the bell peppers thin and keep aside. I have used local cucumbers, hence peeled the skin. If you are using mini-English cucumbers, then avoid peeling the skin.
I cut the cucumber into circular slices and then halve them. Thinly sliced the onion.
Once all the salad vegetables are sliced, take them in a bowl and mix. Add the dressing, give a quick mix and serve immediately.
Note: I have not used Everything but the Bagel seasoning. Instead, I have used similar ingredients like toasted white sesame seeds, garlic flakes, salt, etc. The cucumber and bell pepper salad turned out so good.
So, if you do not have the particular seasoning, you can try the above method to prepare this viral salad recipe.
Serving Suggestions
You can serve this salad with a variety of foods and may be with almost any meal. For example, Air Fryer BBQ Chicken Breast, Air Fryer Bread Pizza, any type of grilled chicken, burgers, bowl of stew and many more.
If you're a salad lover, this might also be your bowl of low carb meal, especially during summer.
Variations
Currently, this salad is vegan; but, if you make alterations, it may not remain vegan. You can add plant (tofu) as well as animal protein (shrimp, chicken, boiled egg) in this.
If you prefer sweet taste in salad, you can add honey in the dressing.
Storage
As the salad can be prepared quickly, I would recommend making it fresh. If you are creating a large quantity for a home-based gathering, I recommend not mixing the dressing into the entire salad at once. Make the salad in batches when you need to refill the salad dish. This way, there will be relatively less leftovers.
You can store the leftover in a dry and airtight container and keep in the refrigerator for 1-2 days. However, vegetables may not retain their crunchiness.
