Grilled Chicken Salad is an easy-to-prepare dish. Shredded grilled chicken breast is piled on a bed of lettuce with other assorted vegetables in this Easy Grilled Chicken Salad. This is a refreshing summer salad which you can enjoy as a complete meal.

This grilled chicken salad is fast, filling, and delicious. It is packed with the goodness of protein and rich in fiber. Whenever you are not feeling to have a heavy meal, you can definitely go for this nutritious meal.

Ingredients you will need for Easy Grilled Chicken Salad

Chicken: A key ingredient to make this salad. I have used boneless chicken breasts. You can also use leg or thigh but then after grilling you have to shred the meat and used the boneless meat.

Vegetables: You can use varieties of vegetables in this salad. I have used sweet corn, yellow and red bell pepper, zucchini, and onion. You can also add cherry tomatoes and avocados. Don't forget to add fresh lettuce leaves that is a must ingredient and it adds lot of freshness to the salad.

Other Ingredients: Apart from the above mentioned ingredients you need few ingredients (chilli powder, oregano, ginger paste, salt, extra virgin olive oil, etc.) to make the grilled chicken.

Salad Dressing: I have made a quick and easy salad dressing for this grilled chicken salad. You need lemon juice, extra virgin olive oil, crushed black peppercorn, and salt to prepare the simple salad dressing.

How to make Easy Grilled Chicken Salad

Follow these three steps to make Easy Grilled Chicken Salad at home.

Making of Grilled Chicken

Marinate the chicken breasts with lemon juice, extra virgin olive oil, salt, crushed black pepper corn, oregano, ginger paste, and red chilli powder. Keep it for 15- 30 minutes. You can use your choice of spices to marinate the chicken.

Step-by-step grilled chicken

After that heat a grill pan and brush it with little oil and grill both side of the chicken breasts well. Alternatively, you can also grill chicken breasts in oven.

After cooling down, shred the grilled chicken and keep aside.

Salad Dressing Preparation

A simple salad dressing can take your salad to the next level! Do you agree that making your own salad dressing is a simple and cost-effective alternative to store-bought dressings. I did the same for this summer salad recipe.

Instead of making the salad dressing in bulk, I made it fresh and used this before serving the salad. Lemon juice, EVOO, salt, and freshly ground black peppercorn are the key ingredients of this dressing. If you prefer sweetness then add a dash of honey into the dressing.

Assembling Salad

After the chicken has been grilled and the salad dressing has been prepared, it's time to make the salad. You should prepare the vegetables ahead of time by chopping them and keeping them ready. I chop the lettuce leaves and immerse in ice-cold water to keep it fresh. Finally, when everything is ready I take them out from the water and add to the salad.

If you are using frozen sweet corns then you must thaw them ahead of time. I prefer to use frozen corns, you can use corn from the cobs. In that case, you require extra time.

Combine chopped vegetables, sweet corn, and lettuce in a large salad bowl. Gently toss them. Mix in half of the salad dressing thoroughly. Then, slowly sprinkle the remaining dressing over the shredded grilled chicken. Gently toss them. Serve it once you've double-checked the seasonings.

Can I store the leftovers?

If you know there will be leftovers, then use the dressings only on the portion you are going to serve or consume. Refrigerate the leftovers and dressing separately for 3-4 days.

Materials

Ingredients for Grilled Chicken

  • 2 nos Chicken Breasts approx 400 gms
  • 1 tablespoon Lemon Juice
  • Salt to taste
  • 3 tablespoon Olive Oil Extra virgin
  • 2 teaspoon Ginger Paste
  • ½ teaspoon Crushed Black Peppercorn
  • ½ teaspoon Oregano
  • ½ teaspoon Red Chilli Powder

Other Ingredients for Salad

  • ¼ cup Sweet Corn
  • 2 cups Lettuce chopped
  • 1 no Onion, medium chopped
  • ½ cup Zucchini cut into small cubes
  • ¼ cup Red Bell Pepper chopped
  • ¼ cup Yellow Bell Pepper chopped

Salad Dressing

  • 2-3 tablespoon Olive Oil Extra virgin
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Freshly Ground Black Pepper
  • Salt to taste

Instructions

Making of Grilled Chicken

  • Wash and pat dry the chicken breasts.
  • Marinate the chicken breasts with the mentioned ingredients (use 1-2 tablespoon of oil) for half an hour.
  • Heat a grilled pan and brush oil on it. Grill both sides of the marinated chicken breasts. Brush with oil whenever required.
  • Once the chicken breasts are grilled, allow them to cool. Later shred these grilled chicken breasts.

Preparation of Salad Dressing

  • Take a small size bowl and add lemon juice into it. Add salt and freshly crushed black peppercorn.
  • Whisk until the salt is dissolved. Drizzle extra virgin olive oil in a slow, steady stream while whisking consistently until emulsified.

Assembling Salad

  • In a large salad bowl, add chopped vegetables, sweet corn, and lettuce. Toss them gently.
  • Add half of salad dressing and combine well.
  • Next add shredded grilled chicken and slowly drizzle the remaining dressing. Toss them gently.
  • Check the seasonings and serve it.
